More than just good coffee, Java+ sells a selection of premium cheese and charcuterie, pickles and dips, alongside delectable homemade cakes, freshly-baked breads, sandwiches, salads and quiches, answering all foodies’ dreams for high quality food on-the-go. Located in the lobby of the hotel and adjacent to Marriott Cafe, Java+ boasts an open layout with natural lighting, textured stone floors and wooden panels. By night, it transforms into an ideal spot to unwind over a glass of red wine and authentic Spanish tapas such as Croquetas de jamon ibéricocib all i oli – Iberian Ham Croquette with Aïoli, and Albóndigas con sepia – Beef and Pork Meatballs with Cuttlefish.

Executive Pastry Chef

As a child, Jason grew up receiving sweet cupcakes from his father, who was then a baker, whenever he returned from work. This unforgettable memory has been one of the most influential factors in leading him to the path of becoming a pastry chef, as he believes that heavenly pastries and desserts brighten up your day.

He started his apprenticeship at the young age of 16, where he was exposed to the world of baking and pastries at various bakeries at Acland Street – one of the well-known food precincts in Australia. With the thirst of exploring other parts of the world, Jason joined the luxurious cruise liners as Sous Chef in his early twenties. His four years of cruising brought him to more than 90 countries, providing him the valuable insights to the distinctive cultures and most importantly, inspirations on the art of pastry making.

At the Singapore Marriott Hotel, Jason aims to melt everyone’s heart with his delightful creations, which is classically French with a twist – where his favourite ingredient in pastries making is lime. The current Executive Pastry Chef shares his other passions in life apart from pastries – he enjoys water-sports activities and the thrilling skydiving!
